One of the best things about the summer in Wisconsin is the fact that you have multiple choices for CSA offerings! Last summer was the first year that I joined one and it was the best thing that I ever did! Each week, a crate full of fresh goodies for me to enjoy!
One of the best things about the farm that I opted to go through, each week, they provide a recipe or two for a few of the items you received! It’s always fairly simple recipes that anyone would have all the ingredients on hand and these recipes are also some of their family favorites on the farm.
This week, it was Zucchini Fudge Cake how could I say no to that? Well, actually, the way the recipe is written, I would have to say no, but with a few tweaks, I would be able to enjoy it. So of course that is exactly what I did!
Original Recipe:
- 2 Eggs
- 1 C Sugar
- 1 tsp vanilla
- 6 TBS butter
- 1/4 C Cocoa
- 1 tsp baking powder
- 1 1/2 C Flour
- 1/2 tsp baking soda
- 1/3 tsp salt
- 1/2 C Milk
- 1 1/2 C coarsely shredded unpeeled zucchini
- 1/2 C Chopped walnuts (optional)
In Large bowl, beat eggs until fluffy. Add sugar gradually until think and lemon colored. Beat in vanilla and softened butter. In separate bowl, combine dry ingredients. Stir half of the dry ingredients into the egg mixture, then add the milk. Add the remainder of the dry ingredients. Beat until smooth. Fold in zucchini and nuts (if using).
Pour into greased 13×9 pan. Bake at 350 for 35-40 minutes or until toothpick comes out clean.
Cool completely and frost with favorite fudge icing.
With a few modifications, I had a beautiful bowl of fudgy goodness going into the pan!
My Modifications:
- I didn’t have Vanilla extra so I opted to use Caramel Extract
- Gluten Free Four (I use LiveGFree brand which can be found at your local Aldi’s store)
- Since I can’t have cow’s milk, I substituted Cashew milk today. Next time I might try coconut milk!
40 minutes later I had a kitchen that smelled of chocolate and a fabulous looking cake that I couldn’t want for it to cool!
I actually didn’t even bother frosting it! there was a fudge frosting recipe included with the cake recipe, but the simple chocolaty flavors of this cake didn’t need extra sugar added! We simply ate is a chocolate bar/brownie type dessert!
I even took some to work and no one knew that it was zucchini in it! Win!!!
